Cozy Curry Chicken Salad

Summertime is the perfect time to make grab and go sandwiches. As families hit the vacation trail a hearty flavorful sandwich will make everyone happy. So, whether you are packing some food for a long drive to your families summer vacation spot or you heading out for an evening open air concert, or you are going to soak up some rays poolside or on a sandy shore this Curry Chicken Salad will make a great sandwich or lettuce wrap!

Ingredients:

2 Chicken Breasts, cooked and finely diced
1/2 celery stalk, finely diced
1/4 Cup mayonnaise (add more or less for desired creaminess)
1 Tablespoon honey (or Agave Nectar)
1 Teaspoon, Spicy Rooster Organic Curry Blend
1 Pinch salt/freshly cracked black pepper
2 tablespoons roasted, chopped cashews
2 tablespoons golden raisins
1 green onion, finely chopped
2 tablespoons chopped, fresh cilantro leaves

This recipe is simple to prepare. Once your chicken is cooked, cooled and chopped mix it with all the other ingredients apart from your dressing. I like to make dressings separate so I can ensure they are exactly how I want them before mixing them in with all my other ingredients. This also allows you to make any personal modifications you may want, some what things creamier, some may want them spicier, some may like more curry etc. In this case whisk your mayo, honey, curry, cilantro, and salt and pepper together. Once the dressing is how you want it add in your remaining ingredients. Now you are ready to serve this up as is, in a lettuce wrap, on a salad, or with some fresh bread!
