Cajun Chicken Spinach Salad

Bring on the fresh flavors of spring! This light and refreshing salad has a sweet heat brought on by the combination of Spicy Rooster Cajun Chicken combined with sweet springtime strawberries. You will be craving this salad all season long.


2 chicken breasts
2 Tbsp. SPICY ROSTER CAJUN seasoning
5 c. baby spinach
1 c. sliced fresh strawberries
1/2 c. fresh blueberries
1/4 c. Gorgonzola Crumbles (or Feta Cheese Crumbles)
1/4 c. Candied chopped pecans

Dressing Options: Brianna's Poppy Seed, Brianna's Blush, Girade's Champagne Vinaigrette.   


Heat a pan over medium heat. Coat each chicken breast in spicy rooster cajun seasoning. Cook the chicken for 4-5 minutes per side in the hot pan until internal temperature is 165°. Allow chicken to rest while preparing the salad. Place cleaned spinach in bowl. Top with the strawberries, blueberries, pecans, and cheese. Slice each chicken breast into strips and place on top of salad. Toss with desired amount of dressing and dig in!
