Hearty Chicken Pot Pie Deconstructed

Everyone loves warm comfort food during the cold winter months. What makes this recipe even better, it is easy to make! 

Serving size 4-6 people

Ingredients:

4 Cups Roast Hormone Free Chicken or Turkey Meat

3 Tablespoons Spicy Rooster Organic Everything Blend

1 1/2 Tablespoons Sage Powder (Or Finely Chopped Fresh Sage)

4 Cups Organic Milk (This may vary depending on the thickness of your rue)**

2 Cups Organic Frozen Corn

2 Cups Organic Frozen Peas

1 Large Organic Yellow Onion

2 Cup Organic Celery

2 Cup Diced Organic Carrots 

1 Stick Organic Butter **

2 Cups Organic Flour **

2 Tablespoons Organic Olive Oil

1 Cup White Wine

Method: 

Make your Roux. Melt butter, add flour and whisk until golden brown. Set aside.

Chop and Sauté one large yellow onion and approx. 2 Cups of diced celery and carrots in olive oil. After 5 minutes deglaze with white wine, reduce for another 2 minutes add then add peas and corn.

Using your left over rotisserie chicken or left over turkey (you can also buy pulled chicken or turkey in most local grocery stores, if you don't want to do the work) shred and place with sauté mix.

Next, pour in your milk and Spicy Rooster Everything Blend spice mix. When mixture comes to a slow rolling boil add 1/2 of your roux mix. Let mixture return to a slow boil and add remaining roux. You may also adjust thickness by adding more roux or thinning it out by finishing with more milk.

Portion in a soup bowl and top deconstructed Pot Pie with a fresh Biscuit and you have a hearty bowl of warm comfort food. 

 

** If you're looking to lighten this recipe up a bit, NO PROBLEM, simply substitute organic chicken or turkey stock for the milk, and if you want to go even lighter you can use corn starch instead of the roux to thicken things up. **
