Chickpea & Kale Salad

Chickpeas are high in fiber, protein, and a good source of iron making them great for digestive health, and good for blood sugar regulation. This recipe is quick, easy, healthy, kid friendly, a good value and adaptable! 

  • 1 can Organic Chickpeas (rinse and drain)

  • 3-4 leaves kale (chopped)

  • 2 tablespoons fresh parsley (Finley chopped)

  • 2 tablespoons olive oil

  • 1 clove garlic, chopped

  • 1 lemon, juiced

  • SPICY ROOSTER EVERYTHING BLEND to taste (Approx 1/2 Tsp.)

In a bowl, combine chickpeas, kale, parsley, olive oil, garlic and lemon juice. Add salt, pepper and grated cheese to taste. Toss all ingredients together and mix well. Cover bowl and refrigerate. Best served at room temperature or chilled. Top with more grated cheese for presentation.

A nice twist is to make this a Curry Chickpea & Kale Salad. The only change is to use SPICY ROOSTER CURRY BLEND in place of our EVERYTHING BLEND.
