Quick Curried Cauliflower
"Eat your veggies!" Those words can be like nails on a chalkboard for some kids (and even adults), but with veggies that taste like this no one will need any prompting to clean their plate. These curry roasted cauliflower florets are delicious and super simple to make.
- 1 large head cauliflower, cored, broken into med florets, cut larger florets into 1/2-inch slices
- 1/4 cup olive oil (or oil of choice)
- 1 1/2 teaspoons Spicy Rooster Curry Blend
- 2 Tablespoons Toasted Sliced Almonds (Toast in a pan on stovetop while cauliflower is roasting)
Preheat oven to 400 degrees. Toss florets with olive oil and Spicy Rooster Curry Blend spread on baking sheet and roast cauliflower for 30 minutes, flipping halfway through.
