KILLER BBQ Shrimp Spicy Rooster Style!!!

Summer is in full swing and that means barbeque!! Spicy Rooster’s BBQ blend is the perfect choice for all your traditional BBQ possibilities. Whether you are slow cooking ribs and slathering them into a saucy mess or keeping it clean with a nice dry rub, or even choosing to grill up some BBQ chicken and dipping that into some finger licking good sauce, Spicy Rooster BBQ blend is a must have.

Now, barbecue shrimp is not barbecue in the low-heat, slow roasting, wood-smoked, style. But this stove-top alternative it is still barbeque in the spicy, saucy mess sense.

That being said, this is one of my all-time favorite BBQ shrimp dishes, and I have a feeling, it will be a favorite of yours as well.

2/3 lb. Peeled and Deveined Shrimp (26/30's of 31/35 size shrimp are perfect for this recipe)

3 Tablespoons Spicy Rooster BBQ Blend

1 Tablespoon Spicy Rooster Cajun Blend

3 Tablespoons Olive oil

2 Teaspoons chopped garlic

1 1/2 ounces cooking Sherry

1 1/2 ounces Apple Cider vinegar

1/2 cup tomato juice

1 Roma Tomato Rough Chop (or Dice based on preference)

1 Tablespoon lemon juice (fresh squeezed preferred)

3 Green onions chopped

2 Tablespoons Kerrygold Garlic Herb Butter (Or make your own compound herb butter)

2 Demi Baguettes

Combine the shrimp and Spices in a bowl and set aside.

Heat the olive oil in a skillet over medium heat, then add the garlic and shrimp.

Toss quickly to cook evenly. Cook for 2 minutes.

Add the Sherry and apple cider vinegar and reduce for one minute.

Add tomato juice and reduce again for one minute.

Add the lemon juice, chopped tomato and green onions.

Remove from the heat and add the Herb Butter, swirling it into the sauce.

Spread Extra Garlic Herb butter on sliced baguettes and lightly toast and serve with shrimp.

Be sure to make extra because this will go FAST! Enjoy.
