Crazy Good Curry Couscous Salad
For many people, there is a love-hate relationship with curry, either they love it or they hate it. Well, Spicy Rooster is changing the way people feel about Curry. Now, all you need is a crazy good recipe to try it out with... I think we can help with that, try this crazy good (and crazy easy) curry couscous salad.
1 1/2 Tablespoons Spicy Rooster Curry Blend (Of course you can adjust to your liking and go lighter or heavier, so start with 1/2 Tablespoon at a time to find your preferred amount)
1 Box Israeli Couscous (approx. 10oz)
1 Cup Raisins
1 bag shredded carrots
1/4 Cups Toasted almonds
2 Tablespoons Fresh Parsley
2 Tablespoons Fresh Cilantro
3/4 Cup Canola Oil (or Olive Oil)
1/3 Cup Lemon Juice
1 tsp Granulated Sugar
1/3 Cup Chopped Scallions
Toast Almonds (bake for 3-5 minutes at 400°)
Cook couscous (bring water to a boil and cook for approx. 10 minutes, drain and rinse to cool.)
Core and Dice Apples. Chop Parsley and Cilantro.
Mix all ingredients together.
(This is a basic recipe but you can add so many ingredients to it, like edamame, garbanzo beans, dried cranberries etc.)
